Egmont Honey – Honey peanut butter chocolates
The perfect quick and easy snack filled with protein to take on the go for travel & work or for that mid-afternoon snack! Simply more-ish yet better for you!

Cooling time: 30-40 mins
Ingredients:
1/3 cup Egmont Honey
1/3 cup crunchy peanut butter (Pics work well)
3 x large, salted rice crackers
1 tsp vanilla extract
100g dark chocolate
½ cup peanuts, crushed
2 x tsp coconut oil
Optional toppings:
Flaky sea salt to top
Crushed pistachios
Freeze dried raspberries
½ cup peanuts, crushed
1/3 cup melted peanut butter to drizzle
Instructions:
- In a large bowl add your honey, peanut butter and vanilla essence. Mix with a wooden spoon until well combined with a thick liquid consistency.
- From here crumble the rice crackers into the bowl and mix well.
- Once fully combined, spoon about 2 tbsp into your hand and roll well into balls. Make sure to pack this well so each one does not disintegrate.
- The mixture should make 8-10 balls.
- Once these have been made, place them in the fridge and leave to cool for about 10 minutes. While the rice balls are cooling, begin to melt your dark chocolate in the microwave in small bursts and still well to avoid lumps and keep it looking glossy.
- From here, using a kebab stick or cocktail stick, submerge the balls into the chocolate and roll until coated fully.
- Transfer to a lined baking sheet and top with your fav toppings.
- Pop back in the fridge until the chocolate has hardened fully, about 30mins!
