Egmont Honey Poached Fruit
These peaches are delicious on top of muesli or porridge or served as a dessert with a scoop of good quality vanilla bean ice cream or cream. We also turned the cooking liquid into a delicious syrup which can be poured over the peaches or mixed with soda water to make a refreshing drink.

Cook Time: 10 minutes + 30 mins or so extra if you make the syrup
INGREDIENTS

8 peaches

10 sprigs thyme

Zest 2 oranges, peeled with a vegetable peeler

½ cup Egmont Honey
METHOD

Cut the peaches in half and remove the stones.

Put into a large saucepan along with the thyme, orange zest and honey.

Pour in water to just cover the peaches, put on the lid, bring to the boil then reduce the heat and simmer for 10 minutes or until soft. The time it takes for the fruit will soften depending on how ripe your peaches are so check every-so-often as they cook.

Remove the peaches from the pot using a slotted spoon and serve with ice-cream or cream.

We reduced the cooking liquid down until thick and syrupy, which will take half an hour or so, then poured it over the fruit and mixed some of it with soda water which made delicious drinks.
