Egmont Honey – Honey halloumi Flatbread
This is the perfect lunch of dinner when served with a side salad. Fresh, vibrant and bursting with flavour.

Ingredients:
2 x Flatbread – 1 per person
1 x pack Halloumi - 3-4 slices halloumi per person
1 x tablespoon Egmont Honey
2 x table spoons Hummus of your choice
1 x Sprinkle Chilli flakes
Half a lemon squeezed
1 x bag Rocket or spinach
10 x Cherry tomatoes sliced – 5 per person
Bunch Coriander chopped
1 x sliced capsicum
Instructions:
- Preheat oven to 180 C.
- In a small bowl, add honey, squeeze of lemon, chilli flakes, salt and pepper and stir to combine.
- The, slice halloumi into 3-4 slices per person and place into bowl. Marinate for 10 mins.
- Heat your pan to medium-high heat with a little olive oil.
- Add the halloumi and capsicum to fry and then pour the remaining marinade. Fry the halloumi 2-3 mins on each side until golden brown, while the capsicum softens slightly.
- Next, add the flatbread to the oven to warm.
- Remove Flatbread from oven and top with hummus of your choice.
- Stack rocket, halloumi, capsicum, cherry tomatoes and pour any remaining sauce from pan over the flatbread.
- Finish with a bunch of chopped coriander and a sprinkle of salt and pepper. (Add extra honey for extra sweetness)
