Egmont Honey, Ginger & Dark Chocolate Biscuits

These biscuits are flavoured with honey, lots of fresh ginger and dotted with delicious dark chocolate. Wonderful lunch-box treats or great for a shared morning tea.  

Serves: Makes approx. 30 biscuits 

Prep Time: 15 minutes 

Cook Time: 12-15 minutes 

 

INGREDIENTS  

  • 175g butter, cubed, softened 
  • 2/3 cup Egmont Honey 
  • 2 teaspoons vanilla extract 
  • 3 teaspoons grated ginger 
  • 1 egg 
  • 2 ½ cups flour 
  • 2 teaspoons baking powder 
  • 150g dark chocolate, roughly chopped 

 

METHOD 

  1. Pre-heat the oven to 180°C and line two trays with baking paper.  
  2. Put the butter, honey, vanilla and ginger into a food processor and process until light and fluffy. Add in the egg and process again.  
  3. Tip mixture out into a bowl and add in the flour, baking powder and the dark chocolate. 
  4. Mix until just combined then roll into balls, arrange on the baking trays and press lightly to squash a little.  
  5. Bake for 12-15 minutes or until golden brown and cooked through.  
  6. Remove from the oven and leave to cool before storing in an airtight jar.
