Egmont Honey Citrus Salad
This lovely salad adds a burst of colour, flavour and vitamin C - perfect for enjoying outside on a summery afternoon.

INGREDIENTS
- 6 oranges
- 6 grapefruit
- 2 or 3 mandarins
- Egmont Honey
- Mint
METHOD
- Peel the skins from the oranges, grapefruit and mandarins using a sharp knife. Make sure that most of the pith is removed as this is bitter.
- Slice thinly then arrange on a large plate or platter. We also thinly sliced a rangpur lime with its skin on to add flavour and interest; you could do this with a regular lime.
- Drizzle over some honey and scatter with a handful of lime leaves.
- Delicious served as is or with coconut yoghurt, ice cream or regular yoghurt, or on top of muesli.
