Egmont Honey, Feijoa & Apple Crumble
Who doesn’t love a good crumble? Ours is made using our delicious honey and takes the classic apple crumble to whole new heights with the addition of in-season feijoas (use chopped pear if feijoa is not available in your neck of the woods) and a crunchy almond and ginger-spiked topping. Serve with ice cream or yoghurt and enjoy!
Serves: 6-8
Prep Time: 15 minutes
Cook Time: 40-45 minutes
INGREDIENTS
- 5 cups chopped feijoa
- 3 cups chopped apple
- 6 tablespoons Egmont Honey
- 2 teaspoons vanilla extract
- ¾ cup flour
- ¾ cup oats
- ¾ cup almonds
- 1 teaspoon ground ginger
- 100g butter
METHOD
- Pre-heat the oven to 180° Put the fruit into a baking dish and drizzle over 3 tablespoons of the honey and the vanilla and mix well to combine.
- Then, using the back of a spoon, smooth the fruit out so that it is more-or-less flat.
- Put the flour, oats, almonds and ginger into a food process and process until it resembles coarse breadcrumbs. Add in the remaining honey and the butter and process again until combined.
- Spoon the crumble mixture over the fruit and then bake for 40-45 minutes or until the fruit is cooked through and bubbling around the edges and the top is golden brown. You may find you need to put a piece of tinfoil over the crumble if it starts to brown too much.
- Remove from the oven and serve with yoghurt, cream or ice cream.
