Egmont Honey Baked Oats

These baked oats will become a staple in your cooking repertoire. Warm and comforting and full of flavour, they are sure to get you out of bed in the morning!  

 

 

Serves: 8 

Prep Time: 15 minutes 

Cook Time: 35-40 minutes 

 

INGREDIENTS  

- 200g oats 

- 2 teaspoons cinnamon 

- 1 teaspoon baking powder 

- 100g dark chocolate, roughly chopped 

- 50g Egmont Honey 

- 3 eggs 

- 1 teaspoon vanilla extract 

- 475g banana (5 small or 3 large) 

- 1 cup milk 

- 1 cup water 

- 120g almonds, roughly chopped 

- 1 tablespoon butter 

- 1 tablespoon Egmont Honey 

 

METHOD 

1. Pre-heat the oven to 180°C and grease an oven-proof dish generously with butter.

2. Put the oats, cinnamon, baking powder and chocolate into a bowl and mix well.

3. In a separate bowl whisk together the honey, eggs and vanilla. Add in the banana (we reserved one small banana to put on the top of the baked oats but this is optional) and mash before adding in the milk and water and mixing well.

4. Add the wet ingredients to the dry, mix well to combine and pour into the baking dish. 

5. In a small saucepan melt the honey and butter and add in the almonds, stirring to coat them in the mixture.

6. Scatter these over the oats, add in the banana if you have decided to do this, then bake for 35-40 minutes or until golden brown and set. If the nuts brown too quickly put a piece of tin foil over the dish for the remainder of the cooking time.

7. Serve with yoghurt or cream if you are feeling decadent!
