Egmont Honey Overnight Oats with Strawberry Compote
There is nothing quite like making a batch of overnight oats either to serve a crowd or to have on-hand as a quick, nutritious breakfast. Deliciously creamy and packed with seeds, oats and chewy raisins, it's taken to whole new level with the addition of vanilla and honey-spiked strawberry compote.

INGREDIENTS
OVERNIGHT OATS
- 1 ½ cups oats
- ½ cup sunflower seeds
- 2 tablespoons hemp seeds
- 4 tablespoons desiccated coconut
- 3 tablespoons dried raisins
- 1 tablespoon Egmont Honey
- 1 ½ cups milk
- 1 cups yoghurt
- 1 teaspoon vanilla extract
STRAWBERRY COMPOTE
- 2 cups/300g strawberries (fresh or frozen)
- 1 teaspoon vanilla extract
- 2 tablespoons Egmont Honey
METHOD
Overnight Oats
1. Put all the ingredients for the overnight oats into a bowl, stir well, cover and leave overnight.
2. In the morning if the mixture is too thick, simply thin with some milk or water.
Strawberry Compote
1. Put the strawberries into a pot, cover, bring to the boil then reduce the heat and simmer until soft and beginning to break down.
2. Remove from the heat then stir in the vanilla and honey.
- Divide the oats between 4 bowls, top with the compote and some extra yoghurt or cream if desired then serve.
