Anzac Biscuits
We have put a Egmont Honey twist on the humble Anzac biscuit and added in cinnamon and mixed spiced to boot! We know we’ve broken the rules but we think you’ll love them.
Serves: Makes approx. 24 biscuits
Prep Time: 20minutes
Cook Time: 12-15minutes
INGREDIENTS
-
100g butter
-
1 teaspoon baking soda
-
1 cup flour
-
1 cup oats
-
1 cup shredded or desiccated coconut
-
1 teaspoons cinnamon
-
½ teaspoon mixed spice
-
250g Egmont honey
METHOD
-
Pre-heat the oven to 180°C andline two baking trays with baking paper.
-
Put the butter into a pot, gently melt then mix in the baking soda. It will froth up.
-
Put the flour, oats, coconut and spices (if using) into a bowl.
-
Pour over the butter and the Egmont honey and mix well.
-
Roll into balls, arrange on the trays and flatten out using clean hands then bake for 12 minutes or so or until golden brown and crunchy.
-
Turn the trays halfway through baking to ensure they bake evenly.
-
Remove from the oven and let cool on a cooling rack before storing in a large glass jar.
These keep for weeks. Though we suspect they won’t last that long!
